Smoke fills the kitchen of Norberto Lucion’s eatery. He’s still busy preparing the house specialty, but a few people have asked for his kaldereta.
Norberto is peeling the meat off about a dozen buckets of chicken. They’re part Jollibee chicken joy and part KFC. He says he gets them from a regular supplier.

The buckets of chicken come from a “pagpagan,” a place in the dumpsite of Happyland, where recyclable materials are separated from biodegradables. Plastic spoons and forks, drinking cups, and food cartons, end up being sold at a junk shop. Some of the food in the trash may also end up being “recycled.”
Leftovers from fast food chains are called pagpag, from the Filipino word that means, “to shake off.” Dirt is literally shaken off from food found in dumpsters. They are eaten again. They are also sold. Norberto buys them for P20 (US$0.45) per bucket

The heirloom rice varieties, the product of the terraces, are considered to be an important fixture in the lives of farmers in several areas in CAR.
Staying true to the name, these varieties of rice are passed from generation to generation and are grown by families in their small ancestral lands.

Here are some Filipino street food that are tasty and relatively cheap. Kwek Kwek is made of hard boiled Quail eggs wrapped in an orange-colored batter and deep fried. It is usually sold in 4pcs/stick which costs Php 10.00 (per stick). Calamares is made of Squid with a tasty breading outside (batter) Usually sold in sticks or cups. One (1) stick costs around Php 10.00, while those in cups (which has more or bigger pieces) costs Php 20.00. Isaw are intestines from either chicken or pig. How to eat, the facts and the story

In Palawan and Aklan in the Philippines, the shipworm is called tamilok and is eaten as a delicacy there. It is prepared as kinilaw - that is raw (cleaned) but marinaded with vinegar or lime juice, chopped chili peppers and onions, a process very similar to ceviche or even fried.

Kinilaw na Tamilok Ingredients:
10-20 pieces tamilok
4 tablespooons finely chopped onions
1/2 tablespoon chopped siling labuyo (chili pepper)
4 tablespoons freshly squeezed calamansi juice
1/4 cup vinegar

Kinilaw na Tamilok Procedures:
1. Wash the tamilok and remove the hard portion in the head.
2. Put the cleaned tamilok in a bowl and add the remaining ingredients. Mix well.

Tablea Tsokolate or Cacao Chocolate

What is tablea tsokolate and what makes this drink distinctive from other hot chocolate?

Tablea is a Spanish word meaning tablet, and tsokolate is a Filipino word meaning chocolate. It is a thick hot chocolate specially made from cacao balls. The tablea can also be a thick disk or flat, and even in square form. But the balls are the most popular form made, and is considered as one of Batangas delicacies.

It’s so funny that when you search for “tablea,” most of the Filipino websites that appear in the search results say that tsokolateng tablea translates to “cacao chocolate.” Huh? Chocolate is made from cacao so “cacao chocolate” is redundant. Tablea refers to blocks of cacao which, in Filipino cuisine, are heated with milk to make a hot chocolate drink. My grandparents used to serve this hot drink on Christmas Eve. My mother-in-law introduced me to the Antonio Pueo brand of tablea.

Lambanog is wine made from coconut. Lambanog is famous for its potency that normally carries about 80 to 90 proof variations. It is mostly produced in the Quezon Province, Philippines. It has been passed down throughout generations of coconut plantation farmers. The process involves collecting the sap from the coconut flower, similar to rubber tree tapping. The sap is then cooked and fermented to become tuba, a popular coconut toddy. The tuba is then distilled to make lambanog.

BASI comes from sugarcane extract and samak, a plant commonly grown in the Ilocos region.

The juice from sugarcane stalks collected and boiled in large, open ketles. The brew is poured into earthen jars (burnays) and once it reaches room temperature, the samak leaves, bark and fruit are added. The mixture is stirred and poured into a jar that is tightly covered with banana leaves to allow fermentation. After the aging period, the basi is then transferred to bottles. Basi is the official drink of the Guling-Guling festival merrymakers because of its enervating effect.

We source our pigs from backyard raisers all over the province, are fed 100% organic feeds a week before they are cooked to totally cleanse the pigs’ systems. "Zubuchon" is stuffed with more than a dozen herbs and spices, the pig’s skin is “acupunctured” or pricked all over, then sprayed with fresh coconut water. These processes result to a crispy and brown skin once roasted. No MSG nor soy sauce are used.
The lechon is roasted over charcoal, using bamboo poles.
