unfortunately, this remains a daily reality for many Filipino families. Since MRP is relatively new, its coverage is still
limited. Until then, should another baby cry out of hunger?
Malnutrition and hunger among Filipinos especially children should
be the centerpiece of electoral campaigns for 2016
Smoke fills the kitchen of Norberto Lucion’s eatery. He’s still busy
preparing the house specialty, but a few people have asked for his
kaldereta. The buckets of chicken come from a “pagpagan,” a
place in the dumpsite of Happyland, where recyclable materials are
separated from biodegradables. Plastic spoons and forks, drinking cups,
and food cartons, end up being sold at a junk shop. Some of the food in
the trash may also end up being “recycled.”

Here are some Filipino street
food that are tasty and relatively cheap.
Kwek Kwek is made of hard boiled Quail eggs
wrapped in an orange-colored batter and deep
fried. It is usually sold in 4pcs/stick
which costs Php 10.00 (per stick). Calamares
is made of Squid with a tasty breading
outside (batter) Usually sold in sticks or
cups. One (1) stick costs around Php 10.00,
while those in cups (which has more or
bigger pieces) costs Php 20.00. Isaw are
intestines from either chicken or pig. Sold
in sticks and costs around Php 5.00 a stick.

If there is one dish that really deserves to be in
every Filipino Easter fiesta, it must be the Lumpiang Ubod
(Coconut Spring Rolls). The main ingredient is taken from coconut
shoots, which lends itself to the easter theme of new life and
freshness. The following recipe that I will share here is not original
to me, however, be rest assured that I tried to incorporate my own ideas
like including buko (young coconut) as one of the main
ingredient, and using rice as starch for the spring roll wrapper. Look e.g. the below videos

distinctive from other hot chocolate? Tablea is a Spanish word meaning tablet, and

chocolate specially made from cacao balls. The tablea can also be a
thick disk or flat, and even in square form. But the balls are the most
popular form made, and is considered as one of Batangas delicacies.

It’s so funny that when you search for “tablea,” most of the Filipino websites
that appear in the search results say that
tsokolateng tablea translates to “cacao chocolate.” Huh? Chocolate is
made from cacao so “cacao chocolate” is redundant. Tablea refers to
blocks of cacao which, in Filipino cuisine, are heated with milk to make
a hot chocolate drink. My grandparents used to serve this hot drink on
Christmas Eve. My mother-in-law introduced me to the Antonio Pueo brand
of tablea.

Discs/Tablets. Traditionally served on Christmas and New Years' Eves but
is also available all year round

is wine made
from coconut. Lambanog is famous for its potency that normally carries
about 80 to 90 proof variations. It is mostly produced in the Quezon
Province, Philippines. It has been passed down throughout generations of
coconut plantation farmers. The process involves collecting the sap from
the coconut flower, similar to rubber tree tapping. The sap is then
cooked and fermented to become tuba, a popular coconut toddy. The tuba
is then distilled to make lambanog.
